Huevos Rancheros can be served in many different forms. It seems as though every restaurant has their own way of preparing essentially the same meal. This is because there are many ways to make this concept delicious! The staple ingredients of Huevos Rancheros include tortilla, eggs, sauce/salsa, avocado and beans. Joe and I make this meal frequently and have about 4 or 5 different “preferred” ways to do it. This particular style is referred to “huevos rancheros, B-style” or “huevos rancher-B’s” (soon to come- Huevos Rancher-Joe’s and Eggs Arhar Daal).
B- style rancheros require crispy corn tostadas to be stacked vertically. We use 2 fried eggs, shredded cheese (usually cheddar), homemade salsa, avocado, black beans & spinach. If you didn’t make your own salsa use another delicious salsa and add some diced tomatoes to freshen it up.

Begin with preparing your black beans. Drain one can of beans and add frozen or fresh spinach, warm up. Spinach is good for you, add as much as you’d like. We also like to add a bit of cayenne pepper or black pepper, cumin, and a dash of cinnamon for some extra spice. Other ingredients to consider are mushrooms, corn, artichoke hearts, and edamame.
Next get your plate ready with one tostada and some cheese on it. Begin frying your eggs (we fry four at once for two dishes), once eggs are flipped put your first layer of beans & spinach on the tostada. Place one egg on the first layer of beans. Add another tostada and repeat with another layer of beans, the 2nd egg and another sprinkle of cheese. Top it off with some salsa and avocado. Serve with a glass of orange juice and eat with a fork & knife… or if you’re like me you prefer a Spork for almost everything.

would i completely kill this dish if i skipped the black beans? do you think edamame would work in it’s place, although a totally different flavor?

Kelly- I knew that once i started posting i would gain a group of people that feel the same way about onions! They are in everything!
You wouldn’t completely destroy this dish by cutting out the black beans, we make this dish in many variations and it’s really hard to screw up. The beans are a great source of fat-free protein, they’re easy to stock up on and you can easily add flavor and vegetables to them. However, sometimes i will make a quick lighter breakfast just with one tostada a small amount of cheese, a fried egg, and salsa (no beans). It’s still delicious.
Almost all of my recipes and my cooking style lends itself to being customized to your individual taste. Using edamame in place of beans would be a different flavor, but it would work well anyway, consider mashing it up a little for this dish and adding some spice to taste (salt, chili sauce, cumin?) Spinach mixed with edamame would also be very good. I’m a huge fan of edamame and love to put it in everything possible! I will be posting some other huevos rancheros variations in the near future including one that calls for leftover lentils!

i do love huevos rancheros, though! these look especially good. next time can you try making then heuvos-rancheros-b-and-joe-make-breakfast-for-molly-style?

Molly- don’t be sorry about not hating onions! ha, you’re among the majority of the nation, onions are a staple in everyday eating. It’s not that i hate onions, though i can not tolerate them at all, it’s that they actually make me sick- so, i don’t eat them.
Also, Joe & I would LOVE to make you heuvos-rancheros-b-and-joe-make-breakfast-for-molly-style! seriously, let’s do it soon! You bring the mimosas!
